  • 2 large navel oranges, sliced into thick rounds
  • 34 large cinnamon sticks
  • 68 whole cloves
  • 2 star anise (optional)
  • 1 large knob fresh ginger, sliced into thin coins
  • 1 teaspoon black peppercorns
  • 1/4 cup brown sugar or maple syrup (optional, to taste)
  • 1 teaspoon vanilla extract (optional, added at the end)
  • 12 apples, thinly sliced (optional, for garnish)

Instructions

  1. Wash oranges thoroughly and slice into thick rounds (about 1/2 inch). Slice ginger into thin coins; no need to peel.
  2. Pour the gallon of apple cider into a 6-quart slow cooker.
  3. Add the orange slices, ginger slices, cinnamon sticks, cloves, star anise (if using), and peppercorns to the slow cooker.
  4. Stir gently to distribute spices. Add apple slices or brown sugar/maple syrup if using.
  5. Place the lid on the slow cooker and set to LOW. Simmer for 4-6 hours. Do not set to HIGH to avoid boiling off delicate flavors.
  6. After 4 hours, taste the cider. Adjust sweetness with sugar or intensity by simmering longer if desired. Stir in vanilla extract if using.
  7. Strain the spices out before serving using a fine-mesh strainer, or ladle carefully to avoid whole cloves.
  8. Serve hot in mugs, garnished with fresh orange slices or cinnamon sticks.

Notes

Do not overdo the cloves as they are potent. Use whole spices only to avoid a gritty texture. Keep the cider on low heat to prevent boiling, which can make orange peels bitter. The flavor improves after sitting overnight. Store leftovers in the fridge for up to 5 days; do not freeze.
