- 8–10 small flour tortillas (6-inch)
- 1 cup shredded cheddar cheese
- 1/2 cup pickle chips
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 3 tablespoons mayonnaise
- 2 tablespoons ketchup
- 1 teaspoon yellow mustard
- 1 teaspoon relish (optional)
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 teaspoon garlic powder
Instructions
- In a small bowl, whisk together mayonnaise, ketchup, mustard, relish (if using), and smoked paprika. Set aside.
- Warm the tortillas slightly in the microwave or dry-toast in a skillet to make them pliable.
- Heat a large heavy-bottomed skillet or cast iron pan over medium-high heat until hot.
- Divide ground beef into 8 equal balls (about 2 ounces each) and place them in the hot skillet.
- Press down hard on each ball with a spatula to smash them thin (about 1/4 inch thick).
- Season generously with salt, pepper, and garlic powder. Cook for 2-3 minutes until edges are deeply browned and crispy.
- Flip the patties and immediately sprinkle shredded cheddar cheese over the top. Cook for another 1-2 minutes until cheese is melted and beef is cooked through.
- Spread a generous line of secret sauce down the center of a warm tortilla.
- Top with a smashed beef patty, shredded lettuce, diced tomatoes, and pickle chips.
- Fold the tortilla in half and serve immediately.
Notes
Do not crowd the pan to ensure the beef sears rather than steams. Blot excess grease from the skillet before assembling to prevent soggy tacos. Warm tortillas thoroughly to prevent cracking. For a lighter option, substitute ground turkey and use Greek yogurt instead of mayonnaise.
