These crispy churro bites are a quick, pantry-friendly dessert that comes together in under 30 minutes. They feature a choux dough base that is fried until golden and puffed, then tossed in cinnamon sugar and served with a warm chocolate dipping sauce.
Ingredients
- 1 cup water
- 1/2 cup unsalted butter
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar (for coating)

Instructions
- Mix 1/2 cup sugar and 1 tablespoon cinnamon in a small bowl for the coating. Line a baking sheet with paper towels and place a wire rack on top.
- In a saucepan, combine water, 1/2 cup butter, 1 tablespoon sugar, and 1/2 teaspoon salt. Bring to a boil over medium-high heat.
- Reduce heat to medium-low and immediately add all the flour. Stir vigorously for 1-2 minutes until the dough forms a ball and pulls away from the sides. Remove from heat.
- Let the dough cool for 2 minutes. Stir in vanilla extract, then add the egg and stir vigorously until the dough is smooth and glossy.
- Heat about 2 inches of neutral oil in a large skillet to 375°F (190°C).
- Drop small pieces of dough into the hot oil in batches. Fry for 2-3 minutes, turning occasionally, until golden brown and puffed. Remove with a slotted spoon and place on the wire rack.
- While churros are still warm, toss them in the cinnamon-sugar mixture.
- For the sauce, heat heavy cream in a small saucepan until it simmers. Remove from heat, add chocolate chips, 1 tablespoon butter, and a pinch of salt. Let sit for 1 minute, then stir until smooth.
- Serve churro bites immediately with the warm chocolate sauce.

Ensure the dough cools slightly before adding the egg to prevent scrambling. Maintain oil temperature at 375°F for best results. Churros are best served fresh but can be reheated in a toaster oven or air fryer to restore crispiness. The chocolate sauce can be stored in the fridge for up to 5 days and reheated with a splash of milk or cream.
