- 1 tablespoon baking powder (aluminum-free)
- 1 teaspoon kosher salt
- ½ cup Sriracha sauce
- ¼ cup honey
- 2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon butter
- 2 stalks green onions, sliced (optional garnish)
- 1 tablespoon toasted sesame seeds (optional garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil or parchment paper and place a wire rack on top.
- Pat chicken wings thoroughly dry with paper towels to remove surface moisture.
- Place wings in a large bowl and sprinkle with baking powder and salt. Toss to coat evenly, ensuring no clumps remain.
- Arrange wings on the wire rack, leaving space between them. Refrigerate uncovered for at least 30 minutes (or up to 24 hours) to air-dry the skin.
- Bake wings for 45-50 minutes, flipping halfway through, until golden brown and crispy.
- While wings bake, combine Sriracha, honey, soy sauce, rice vinegar, garlic, and ginger in a small saucepan over medium heat.
- Simmer sauce for 2-3 minutes until slightly thickened. Remove from heat and stir in butter until melted.
- Remove wings from oven and immediately transfer to a large bowl.
- Pour warm sauce over hot wings and toss vigorously to coat.
- Serve immediately, garnished with green onions and sesame seeds if desired.
Notes
Do not use baking soda as it tastes metallic. Ensure wings are very dry before baking for maximum crispiness. Do not crowd the pan; bake in batches if necessary. Reheat in oven or air fryer to maintain crispiness; do not microwave.
