Description
A quick and healthy alternative to deep-fried okra, this recipe uses an air fryer to create golden, shattering-crisp pods coated in cornmeal and bold Cajun spices without the sliminess or excess oil.
Ingredients
Scale
- 1 pound fresh okra (small, tender pods)
- ½ cup cornmeal (fine or medium grind)
- 2 tablespoons all-purpose flour
- ½ cup buttermilk
- 1 large egg, beaten
- 1 tablespoon neutral oil (e.g., avocado or light olive oil)
- 2 teaspoons Cajun seasoning blend
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- Optional: 1 teaspoon hot sauce, 2 stalks green onions (chopped)
Instructions
- Wash the okra thoroughly under cold water and pat it completely dry with paper towels to ensure crispiness.
- Trim off the stem ends of the okra and cut into ½-inch to 1-inch pieces.
- Set up a dredging station with three shallow bowls: Bowl 1 contains flour mixed with half the Cajun seasoning; Bowl 2 contains whisked buttermilk and egg; Bowl 3 contains cornmeal mixed with remaining Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Dredge each okra piece in the flour mixture, shaking off excess, then dip into the buttermilk mixture, and finally roll in the cornmeal mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C).
- Lightly spray or brush the coated okra with oil.
- Place okra in the air fryer basket in a single layer, ensuring space for air circulation. Cook in batches if necessary.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately, garnished with chopped green onions and extra Cajun seasoning if desired.
Notes
Ensure okra is completely dry before coating to prevent sogginess. Do not overcrowd the air fryer basket; cook in batches if needed for maximum crispiness. For extra crunch, add panko breadcrumbs to the cornmeal. Reheat leftovers in the air fryer at 350°F for 3-4 minutes to restore crispiness.
