  • 2 pounds boneless, skinless chicken breasts (or 3 cups shredded rotisserie chicken)
  • 2 cans (15oz each) white beans (Cannellini or Great Northern), rinsed and drained
  • 1 can (15oz) white corn (or frozen corn)
  • 2 cups low-sodium chicken broth
  • 1 jar (16oz) salsa verde
  • 8oz block cream cheese, cut into cubes
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional: Fresh cilantro, jalapeños, or hot sauce

Instructions

  1. Place raw chicken breasts in the bottom of a 4-6 quart slow cooker. If using rotisserie chicken, skip this step.
  2. Add rinsed white beans and corn on top of the chicken.
  3. Pour in chicken broth and salsa verde. Sprinkle cumin, chili powder, oregano, salt, and pepper on top. Do not stir yet.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
  5. Remove chicken from pot and shred using two forks or a hand mixer. Return shredded chicken to the slow cooker.
  6. Turn slow cooker to HIGH. Add cubed cream cheese and stir gently until melted and smooth (5-10 minutes).
  7. Remove slow cooker from heat. Stir in sour cream and shredded Monterey Jack cheese until combined.
  8. Taste and adjust seasoning with salt, pepper, or heat as desired.
  9. Serve hot with toppings like extra cheese, sour cream, cilantro, avocado, or tortilla chips.

Notes

For a thicker chili, mash some beans against the side of the pot. Always add sour cream off the heat to prevent curdling. This recipe freezes well for up to 3 months, though dairy texture may change slightly upon thawing.
