Description
A complex and deeply flavorful horchata made by toasting cinnamon sticks and rice before blending. This gluten-free and naturally dairy-free drink offers nutty, caramelized notes that elevate the traditional recipe.
Ingredients
- 2 cups (400g) long-grain white rice
- 8 cups (2 liters) water (divided: 4 cups for soaking, 4 cups for blending)
- 4–5 cinnamon sticks (about 10g)
- 2 teaspoons pure vanilla extract
- 1/2 to 3/4 cup (100-150g) granulated white sugar
- 1–2 cups evaporated milk or sweetened condensed milk (optional, for creaminess)
- Ice for serving
Instructions
- Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch.
- Place the rinsed rice in a large bowl and cover with 4 cups of water. Let it soak for at least 4 hours, or ideally overnight.
- Heat a large skillet over medium-low heat. Add the cinnamon sticks and toast for 2-3 minutes, stirring frequently, until fragrant and slightly darker. Do not burn. Transfer to a plate to cool.
- Drain the soaked rice and discard the soaking water.
- In a blender, combine the soaked rice, 4 cups of fresh water, the toasted cinnamon sticks, and vanilla extract. Blend on high speed for 2-3 minutes until completely smooth.
- Set a fine-mesh strainer or nut milk bag over a large bowl or pitcher. Pour the blended mixture through to strain. Press down on the pulp to extract all liquid, then discard the pulp.
- Stir in the sugar until dissolved. Taste and adjust sweetness. Add milk or condensed milk if using.
- Refrigerate for at least 30 minutes to chill and allow flavors to meld.
- Serve over ice in tall glasses. Garnish with a cinnamon stick if desired. Stir well before serving as solids may settle.
Notes
Toasting the cinnamon is the key step for deep, nutty flavor. Use long-grain white rice for a smooth texture; avoid short-grain or brown rice if you want a classic creamy consistency. Horchata can be stored in the fridge for up to 3 days. Stir well before serving as it separates. Do not freeze as texture becomes grainy.
