  • 1 cup water
  • 4 cardamom pods (cracked)
  • 3 whole cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 45 black peppercorns
  • 3 tablespoons honey (for concentrate)
  • 1 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup heavy cream (for foam)
  • 1 tablespoon honey (for foam)
  • 1/2 teaspoon cinnamon (for foam garnish)
  • 1 cup ice cubes

Instructions

  1. Combine water, tea bags, cardamom pods, cloves, cinnamon, ginger, and peppercorns in a saucepan.
  2. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 5-7 minutes to extract spice flavors.
  3. Remove from heat and let steep for 3-5 minutes while cooling slightly.
  4. Remove tea bags and strain out spices to create a strong chai concentrate. Set aside to cool to room temperature.
  5. In a small bowl, combine heavy cream, 1 tablespoon honey, and a pinch of cinnamon.
  6. Whip the cream mixture with a handheld frother or whisk until it thickens and forms soft peaks.
  7. Fill a tall glass with ice cubes.
  8. Pour 1/2 cup of the cooled chai concentrate over the ice.
  9. Add 1/2 cup of cold milk and stir gently to combine.
  10. Spoon the honey cinnamon foam on top of the latte.
  11. Sprinkle with extra cinnamon and serve immediately.

Notes

Make extra chai concentrate and store in the fridge for up to a week for quick assembly. For a dairy-free version, use oat milk and coconut cream. Ensure the cream is cold before frothing for the best texture. Do not rush the steeping process to avoid weak flavor.
