A smoky, spicy, and incredibly creamy Hatch Chile queso dip that comes together in just 15 minutes using a roux-based technique for a silky smooth texture without separation.

- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 can (4-6 oz) canned Hatch chiles, diced
- 2 cups (200g) sharp cheddar cheese, freshly shredded
- 4 oz (115g) cream cheese, softened and cubed
- ¼ teaspoon cumin (optional)
- Hot sauce to taste (optional)
- 2 tablespoons green onions, chopped (for garnish)
- Pinch of black pepper
Instructions
- Prep ingredients: Shred the cheese, drain and dice the chiles, and measure out spices.
- Make the roux: Melt butter in a medium saucepan over medium heat. Add flour and whisk constantly for 1-2 minutes until light golden and nutty.
- Add milk: Gradually pour in milk while whisking constantly to prevent lumps. Cook until the mixture thickens and coats the back of a spoon (about 3-4 minutes).
- Season and add chiles: Stir in garlic powder, smoked paprika, and black pepper. Add diced Hatch chiles and simmer for 1-2 minutes.
- Melt cheese: Turn off the heat and let the pan cool for 30 seconds. Gradually add shredded cheddar and cubed cream cheese, stirring constantly until smooth and melted.
- Serve: Transfer to a serving bowl, garnish with green onions, and serve immediately with tortilla chips or vegetables.
Notes
Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Always remove the pan from heat before adding cheese to prevent graininess. If the sauce is too thick, add milk one tablespoon at a time. This dip does not freeze well; the dairy may separate.
