Ingredients
- 2 large English cucumbers (about 600g), sliced into thin half-moons
- 1/2 medium red onion (about 75g), sliced into thin rings or half-rings
- 1/2 cup fresh dill (about 15g), chopped
- 1 clove garlic, minced
- 1/2 cup full-fat sour cream
- 2 tablespoons mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- Wash the cucumbers thoroughly. Slice them into thin half-moons (about 1/4-inch thick) and trim the ends off the red onion, slicing it into thin rings or half-rings. Mince the garlic and chop the dill.
- In a small bowl, whisk together the sour cream, mayonnaise, apple cider vinegar, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth and creamy. Adjust seasoning if needed.
- In a large mixing bowl, combine the sliced cucumbers, red onion, garlic, and dill.
- Pour the dressing over the vegetables and gently toss everything together using tongs or a large spoon to coat every slice evenly without breaking the cucumbers.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow flavors to meld and cucumbers to absorb the dressing.
- Taste again before serving and add more salt or pepper if needed. Give it a final gentle toss and serve chilled.
Notes
English cucumbers are preferred as they have fewer seeds and less water than standard cucumbers. If using regular cucumbers, scoop out the seeds before slicing. For a vegan version, substitute sour cream and mayo with vegan alternatives. The salad tastes better after chilling for 30 minutes or overnight. Do not freeze, as cucumbers will become mushy.
