  • 1 cup (240ml) strong coffee (espresso, cold brew concentrate, or strong drip coffee)
  • 1/2 cup (120ml) full-fat canned coconut milk
  • 12 tablespoons Grade B (dark) maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 pinch nutmeg
  • 1 pinch cardamom (optional)
  • 1 pinch salt
  • 1 cinnamon stick (for garnish/stirring)
  • Whipped coconut cream (optional, for topping)

Instructions

  1. Brew your coffee strong. If using drip coffee, use twice the amount of grounds. Set aside, keeping it hot.
  2. Scoop the thick cream from the can of full-fat coconut milk into a small saucepan. Add the rest of the coconut water if a lighter drink is preferred.
  3. Add the maple syrup, ground cinnamon, ground ginger, nutmeg, and salt to the coconut milk in the saucepan.
  4. Heat the milk mixture over medium-low heat. Do not let it boil; aim for a temperature around 150-160°F (steaming but not simmering).
  5. While heating, use a handheld milk frother to whip the milk into microfoam. If no frother is available, whisk vigorously.
  6. Pour the hot coffee into a mug.
  7. Slowly pour the hot, spiced milk over the coffee, holding back the foam with a spoon to let it sit on top.
  8. Garnish with a sprinkle of cinnamon and nutmeg. Stir with a cinnamon stick and serve immediately.

Notes

Do not boil the coconut milk as it can separate or taste metallic. Use full-fat canned coconut milk for best frothing and creaminess. Toasting spices in a dry pan before adding to milk enhances flavor. Warm your mug with hot water before serving to keep the drink hot longer. This drink is best made fresh; do not freeze.
