Description
A homemade pumpkin spice latte recipe featuring a rich, spiced pumpkin syrup made with real pumpkin puree and warm spices. This foolproof method allows you to create a café-quality drink at home for a fraction of the cost.

- 1 cup (240g) canned pure pumpkin puree
- ½ cup (100g) dark brown sugar
- ½ cup (120ml) water
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cardamom (optional)
- a pinch of salt
- 2 shots (about 60ml) strong coffee or espresso
- 1 cup (240ml) milk (whole, oat, or almond)
- whipped cream (optional, for garnish)
- pumpkin pie spice (for garnish)
Instructions
- In a small saucepan, combine pumpkin puree, brown sugar, water, cinnamon, ginger, nutmeg, cardamom, and salt. Whisk until smooth.
- Place the saucepan over medium heat and stir constantly until the sugar dissolves and the mixture begins to bubble gently (about 5-7 minutes).
- Simmer until the syrup thickens slightly and coats the back of a spoon. Remove from heat and let cool for 5 minutes.
- Brew espresso or strong coffee and pour it into a large mug.
- Heat the milk until steaming hot (about 150°F/65°C) but not boiling. Froth the milk if desired.
- Add 2-3 tablespoons of the homemade pumpkin syrup to the hot coffee and stir to combine.
- Pour the hot milk over the coffee mixture. Top with whipped cream and a dusting of pumpkin pie spice if desired.
- Serve immediately.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. The syrup can be made up to 2 weeks in advance and stored in the refrigerator. If the syrup is too thick after cooling, whisk in a teaspoon of hot water to thin it out. For a less sweet version, use less syrup or a sugar substitute.
