Ingredients

  • 1 cup (240g) canned pure pumpkin puree
  • ½ cup (100g) dark brown sugar
  • ½ cup (120ml) water
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom (optional)
  • a pinch of salt
  • 2 shots (about 60ml) strong coffee or espresso
  • 1 cup (240ml) milk (whole, oat, or almond)
  • whipped cream (optional, for garnish)
  • pumpkin pie spice (for garnish)

Instructions

  1. In a small saucepan, combine pumpkin puree, brown sugar, water, cinnamon, ginger, nutmeg, cardamom, and salt. Whisk until smooth.
  2. Place the saucepan over medium heat and stir constantly until the sugar dissolves and the mixture begins to bubble gently (about 5-7 minutes).
  3. Simmer until the syrup thickens slightly and coats the back of a spoon. Remove from heat and let cool for 5 minutes.
  4. Brew espresso or strong coffee and pour it into a large mug.
  5. Heat the milk until steaming hot (about 150°F/65°C) but not boiling. Froth the milk if desired.
  6. Add 2-3 tablespoons of the homemade pumpkin syrup to the hot coffee and stir to combine.
  7. Pour the hot milk over the coffee mixture. Top with whipped cream and a dusting of pumpkin pie spice if desired.
  8. Serve immediately.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. The syrup can be made up to 2 weeks in advance and stored in the refrigerator. If the syrup is too thick after cooling, whisk in a teaspoon of hot water to thin it out. For a less sweet version, use less syrup or a sugar substitute.
