  • 1.5 cups milk (whole, almond, or oat)
  • 2 large eggs
  • ½ cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 oz full-fat brick cream cheese
  • 12 tablespoons heavy cream or milk (for cream cheese)
  • 1 tablespoon sugar (for cream cheese)
  • 2 tablespoons confectioners’ sugar (for drizzle)
  • 12 teaspoons milk (for drizzle)
  • ½ teaspoon cinnamon (for drizzle)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 baking dish with parchment paper and lightly grease.
  2. In a large bowl, whisk together milk, eggs, brown sugar, vanilla, and salt until mostly dissolved.
  3. Add rolled oats and stir to coat. Let sit for 5 minutes to bloom.
  4. In a small bowl, mix softened cream cheese, 1 tablespoon sugar, and 1 tablespoon milk until smooth and spreadable.
  5. Pour half the oat mixture into the baking dish. Drop spoonfuls of cream cheese mixture on top and swirl with a knife. Pour remaining oat mixture on top and smooth.
  6. Bake for 35-40 minutes until golden brown and slightly set in the middle.
  7. While baking, mix confectioners’ sugar, milk, and cinnamon to create a drizzle consistency.
  8. Let oatmeal cool for 10-15 minutes to set before cutting into squares and drizzling with glaze.

Notes

Do not use instant or steel-cut oats as they will alter the texture. Let the oatmeal cool completely before cutting to ensure it sets properly. For meal prep, allow to cool fully before refrigerating to prevent sogginess. Can be frozen for up to 2 months.
