  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, peel and mash the ripe bananas with a fork until mostly smooth with a few small chunks.
  3. Whisk the melted butter into the mashed bananas. Add the sugar, egg, and vanilla extract. Whisk vigorously for about a minute until glossy and well-combined.
  4. Add the flour, baking soda, and salt to the wet mixture. Use a spatula or wooden spoon to fold them in until the flour just disappears. Do not overmix.
  5. Stir in the chocolate chips (and nuts if using) until evenly distributed.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, until edges are golden brown and a toothpick inserted in the center comes out with moist crumbs.
