Chewy Fall Maple Pecan Cookies: Best Brown Butter Recipe

  • Author: Maya
  • Total Time: 45 minutes
  • Yield: 24 cookies 1x

Description

These chewy fall maple pecan cookies feature rich brown butter, real maple syrup, and toasted pecans for a complex, bakery-style flavor with a soft center and crisp edges.

Ingredients

Scale
  • 1 cup (226g) unsalted butter
  • 1 cup (200g) light brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • ¼ cup (60ml) pure maple syrup
  • 1 ½ cups (170g) pecans, chopped and toasted
  • Sea salt flakes, optional for topping

Instructions

  1. Brown the butter: Melt butter in a medium saucepan over medium heat, stirring constantly until it foams, subsides, and develops brown bits with a nutty aroma. Remove from heat and cool for 10-15 minutes.
  2. Mix wet ingredients: In a large bowl, whisk cooled brown butter, light brown sugar, and granulated sugar vigorously for 2 minutes. Add eggs and vanilla, whisking until smooth and glossy.
  3. Combine dry ingredients: In a separate medium bowl, whisk together flour, baking soda, and sea salt.
  4. Make the dough: Fold dry ingredients into wet ingredients until no flour streaks remain. Fold in toasted pecans and maple syrup. Do not overmix.
  5. Chill dough: Cover and refrigerate dough for at least 30 minutes (or up to 24 hours) to prevent spreading and meld flavors.
  6. Preheat and prepare: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop and bake: Scoop tablespoon-sized dough balls onto sheets, spacing 2 inches apart. Bake for 12-14 minutes until edges are golden but centers look soft.
  8. Cool and serve: Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely. Sprinkle with sea salt flakes if desired.

Notes

Ensure brown butter is cooled before adding eggs to avoid cooking them. Toast pecans for enhanced flavor. Chill dough to prevent excessive spreading. Underbake slightly for chewy texture. Measure flour correctly by spooning into cup and leveling off.
