  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried mustard powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Butter or non-stick spray for greasing dish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the crumbled sausage until browned and cooked through (5-7 minutes). Drain excess grease, leaving a little for flavor.
  3. Add the diced onion to the skillet and cook for 3-4 minutes until soft. Add the minced garlic in the last minute and cook until fragrant. Remove from heat.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, whole milk, mustard powder, smoked paprika, salt, and pepper until completely smooth and uniform.
  5. Spread the thawed and dried hash browns evenly across the bottom of the prepared baking dish.
  6. Sprinkle the sausage and onion mixture over the hash browns, followed by the shredded cheese.
  7. Pour the egg custard mixture over everything, ensuring it soaks into the layers. Press down gently with a spatula.
  8. Bake for 45-50 minutes until the top is golden brown and the center is set (not jiggly). Tent with foil if browning too quickly.
  9. Let the casserole rest for 10 minutes before slicing to allow the custard to set fully.

Notes
