  • 8 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 cups fresh spinach (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Heat a large skillet over medium-high heat and cook the sausage, crumbling it into small pieces until browned and crispy. Drain excess grease and set aside.
  3. Tear the croissants into bite-sized pieces and spread them evenly in the prepared baking dish.
  4. Scatter the cooked sausage, diced onion, and optional spinach over the croissants. Sprinkle the shredded cheddar cheese evenly on top.
  5. In a large bowl, vigorously whisk together the eggs, heavy cream, milk, Dijon mustard, thyme, salt, and pepper until uniform and slightly frothy.
  6. Pour the egg mixture evenly over the bread. Use a spatula to gently press down on the bread to ensure every piece is submerged.
