  • Author: Maya
  • Total Time: 55 minutes
  • Yield: 8 servings 1x

Description

A rustic, easy-to-make dessert featuring juicy blackberries and a nutty, flaky cornmeal biscuit topping. This recipe requires no fancy techniques and delivers a comforting, homemade flavor perfect for any occasion.

Ingredients

Scale
  • 4 cups blackberries (fresh or frozen)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1/2 teaspoon cinnamon (optional)
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal (fine or medium grind)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 3/4 cup whole milk
  • 2 tablespoons unsalted butter (melted, for brushing)
  • Coarse sugar (for sprinkling, optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine blackberries, sugar, lemon juice, cornstarch, and cinnamon. Toss gently to coat and pour into the prepared dish.
  3. In a separate medium bowl, whisk together flour, cornmeal, baking powder, and salt.
  4. Cut the cold, cubed butter into the dry ingredients using a fork or pastry cutter until the mixture resembles coarse crumbs with pea-sized butter pieces.
  5. Pour in the milk and stir gently until the dough just comes together; do not overmix.
  6. Drop spoonfuls of the dough over the berry mixture, leaving gaps between biscuits.
  7. Brush the tops with melted butter and sprinkle with coarse sugar if desired.
  8. Bake for 35-40 minutes until the topping is golden brown and berries are bubbling.
  9. Cool for at least 15 minutes before serving to allow the sauce to thicken.

Notes

Keep butter cold for flaky biscuits. Do not overmix the dough. If using frozen berries, do not thaw them first and add 5 minutes to baking time. Let cobbler cool for 15 minutes before serving to thicken the sauce.
