Instructions

  1. Brown the butter: Melt butter in a medium saucepan over medium heat. Stir constantly until milk solids turn golden brown and it smells nutty (5-7 minutes). Remove from heat and pour into a heatproof bowl to cool until just warm.
  2. Mix sugars and butter: In a large mixing bowl, combine cooled brown butter, brown sugar, and white sugar. Mix until well combined and looks like wet sand.
  3. Add eggs and vanilla: Add eggs one at a time, mixing well after each addition. Add vanilla extract and mix until the batter is smooth and glossy.
  4. Combine dry ingredients: In a separate medium bowl, whisk together flour, baking soda, and salt.
  5. Make the dough: Gradually add dry ingredients to wet ingredients. Mix on low speed or stir with a spoon until just combined. Do not overmix. Fold in chocolate chips.
  6. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 24 hours).
  7. Bake: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop 2-tablespoon dough balls onto sheets, spacing them 2 inches apart. Bake for 10-12 minutes until edges are golden but centers look soft.
